There is a little voice that keeps telling me to get a packraft. Not sure how much longer I can resist. I wonder how one would handle with a good flow in the Zion Narrows?

I don't think they would handle well at all for must-make wood avoidance moves. All I can say for sure is: the Zion Narrows is not the place to experiment! Go try some other woody runs first, like the Uintas Bear, or upper Provo's Soapstone. Or for that matter, Ogden's Rainbow Gardens and Pineview (not that woody, but narrow and turny).
These folks would know more about the Zion Narrows:

I think duckies are a fairly common way to paddle the Zion Narrows at LOW water; not really sure about packrafts.

I have friends up in Alaska that are packrafting low water class 4 and 5 creeks. Some dropping at over 500 feet/mile. These things are amazing in the right hands. The Narrows are no place to be if you aren't a class 4 boater. http://www.youtube.com/watch?v=BZRumHkyjCA
